Fight Cancer with Potato Snack
Are Potatoes Poor in Nutrients?
When looking for the foods you shouldn’t eat, you may find potatoes listed. In some studies, starches have been linked to weight gain and obesity. However, are potatoes unhealthy, and should we avoid eating them? Keep reading to find out the answer to this question and how to prepare a potato snack with healthy and beneficial organic mayonnaise salad.
Potato’s nutritional reputation might be due to the way it is prepared and eaten, not from the vegetable itself. For example, most people eat french fries or potato chips that are unhealthy. However, potatoes are highly nutritious. They are an excellent source of many essential vitamins and minerals. A medium potato can provide protein, carbohydrates, fiber, vitamin C, vitamin B6, potassium, manganese, magnesium, phosphorous, niacin, and folate.
Moreover, they are rich in fiber. Studies indicate that high-fiber diets promote gut health and can prevent obesity, heart disease, and type 2 diabetes. Remember that the nutritional content of potatoes varies depending on the variety and how they are prepared. For example, frying potatoes add more calories and fats than baking them.
Furthermore, despite these benefits, potatoes do not provide all the nutrients we need; in fact, no single food can. Potatoes lack vitamin B12, calcium, and zinc, all of which are essential for a healthy body.
Antioxidants in Potatoes and Cancer
Potatoes are rich in compounds, such as flavonoids, carotenoids and phenolic acids, which act as antioxidants by neutralizing harmful molecules known as free radicals. When free radicals accumulate, they can increase the risk of chronic diseases, such as heart disease, diabetes, and cancer. Studies have proven that the antioxidants may limit the growth of liver and colon cancer cells.
Additionally, this vegetable provides vitamin C, a nutrient that acts as an antioxidant. This vitamin helps reduce cellular stress in the stomach and fights the bacteria responsible for causing stomach cancer.
Moreover, the available antioxidants, such as lutein and zeaxanthin, are essential because they prevent degenerative diseases. It also contains glycoalkaloids, which can be toxic to humans if they were available in high concentrations. However, if these compounds were available in low concentrations they can have beneficial effects, such as limiting the spread of cancer cells.
